The Verdict: Success!!

I wrote back in September about a baked oatmeal casserole that I came across on Pinterest. I loved the idea of having oatmeal ready for the week, but that recipe was always a bit soggy and just got soggier as the week progressed. It was good… but when I saw this recipe I got excited about another attempt. Maybe this one would be better.

This recipe has you cover the bottom of a pan with slices of 2-3 bananas. I used three small bananas. Then you sprinkle 1/2 of a cup of blueberries and 1/8 cup walnuts on top of the bottom. Next, you cover that with a mixture (already mixed in a bowl) of 1 cup of rolled oats, 1/8 cup walnuts, 1/2 teaspoon baking powder, 3/4 teaspoon cinnamon and a pinch of salt. The next layer (again, already mixed together on the side) is 1/4 cup maple syrup, 1 cup milk, 1 large egg, 1 teaspoon of vanilla extract, and 2 teaspoons of melted and then slightly cooled unsalted butter. Finally, to top it off you sprinkle another layer of 1/2 cup blueberries and 1/8 cup of walnuts. The recipe turned out well. I really liked the flavor. The blueberries and cinnamon were perfect warmed up in the morning. The bottom layer of bananas was a bit soggy, but not as much as the other recipe. I highly suggest this one if you like blueberries, bananas and oats.
