The Verdict: Delicious

The image above is a beautiful picture of salmon. Doesn’t it look delicious? The recipe is on allrecipes.com.   There it has 5 stars and over 200 reviews. That speaks so highly of this recipe already!

To make this delicious marinade you need to whisk together the following:

  • 1/4 cup brown sugar

  • 1/4 cup olive oil

  • 1/4 cup soy sauce

  • 2 teaspoons lemon pepper

  • 1 teaspoon dried thyme

  • 1 teaspoon dried basil

  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder

Then marinate 4 salmon fillets (about 6 oz each) for about 1 hour in the refrigerator. Then, we wrapped the salmon in aluminum foil and grilled it on the BBQ. We like to wrap the salmon in foil because it keeps the juices in while it grills. An added advantage is that the skin sticks to the salmon while it cooks while the meat doesn’t. When you take it out of the foil the skin stays and you can serve just the meat. I’m a recent fish eater, and not having to pick off the skin (or really see it – my husband takes the foil off) makes me feel just a little better. It’s silly, I know.

The cooked fish was wonderful, even by my picky standards. The combination of the brown sugar, soy sauce and variety of herbs was superb! I served this with green beans tossed in olive oil and garlic and some whole wheat bread. It was quite tasty. We will definitely be making this again.
